Salary: USD 150,000 - 175,000 / annual
Epogee, a food science and lipid chemistry company, is seeking a Principal Separation Scientist to join the analytical team. The company develops novel structured lipids for the food industry, with a flagship ingredient (EPG®) that is a patented fat alternative with 92% fewer calories than traditional fats, applicable to frying, baking, confectionery, and snack applications.
In this role, you will serve as the analytical "source of truth," providing objective data to multiple simultaneous R&D workstreams. A core responsibility is exercising judgment to determine the appropriate level of analytical rigor for each project—whether fast directional data or fully validated, regulatory-grade methods are needed. You will develop, optimize, and execute HPLC and GC/GC-MS methods for lipid and molecular characterization, analyte quantitation, and impurity profiling. You'll independently troubleshoot instrumentation, methods, and data anomalies, and support method validation, gauge R&R, and documentation for regulatory submissions (EFSA, US GRAS, Health Canada).
You will report to the Director of R&D, work alongside another analytical team member, and collaborate with scientists across the broader R&D group. The role emphasizes hands-on laboratory work with opportunities to deepen technical expertise in analytical equipment and expand into additional techniques such as rheology and benchtop NMR. You will also integrate AI tools into your workflows to enhance data analysis and support rapid iteration in innovation cycles. This is a full-time, in-office position based in New York City, with five days per week onsite.
Requirements:
- MS or PhD in Analytical Chemistry, Chemistry, or related field
- 5+ years of hands-on HPLC and GC experience, ideally in food, lipid, or pharma chemistry
- Demonstrated ability to independently troubleshoot instrumentation and methods
- Strong judgment on matching analytical rigor to project stage and business need—comfortable moving fast when speed matters and being exacting when the situation calls for it
- Detail-oriented with excellent documentation habits
- Experience with rheology and/or benchtop NMR, or willingness to cross-train
- Experience integrating AI tools into scientific or lab workflows
- Enjoys hands-on lab work and wants to grow a career at the bench
- Comfortable working closely within a small, cross-functional team
